When butchering, you will have pieces that are ideal for cooking to proper doneness, and then you have the end pieces - the pieces that are not the greatest for cooking to those temperatures. That's why we take it personally because all of that work that went into that piece of meat went out the window as soon as the chit came through saying "Well Done". You can take the best rib steak from a rib of beef, and the worst, and objectively speaking, produce the same texture and "juiciness". The texture of a well-done steak is such that proper trimming, marbling and cooking techniques are meaningless. The issue is that when you cook a steak to well-done, most of the time invested in getting the cut just right is wasted. Of course we can cook it so that it's "good". Either way, a steak represents a fairly large time investment overall.ĭespite the whiners, it is not difficult to cook a steak to well-done and still have it be "juicy", and I do not believe many experienced grillardins have a hard time doing it. Usually it’s super busy so the fewer words you use the better for expediency. Is there something else I could call this besides ‘lettuce bacon Mayo sandwich’? We order in person from the truck and out of the 100+ times I’ve ordered this I’ve only had pushback from one person. I work in film and we often has a breakfast truck that’ll make whatever you want (within reason of course, as long as they have the ingredients which are all breakfast-typical stuff) I love most of what’s in a BLT, but have an aversion to raw tomatoes (I’m on the spectrum, and it’s a sensory/texture trigger for me) so I’ll often order a BLT but specify no tomatoes.
